RECIPE NAME: Mozzarella Smores
INGREDIENTS:
* 16 Bocconcini (bite-sized mozzarella balls)
* 16 sun-dried tomato halves (drain oil)
* 16 fresh basil leaves
* 32 crackers (ritz style)
PREPARATION: This is kinda a do-it-yourself recipe, good for small groups in a social setting around the campfire. Keep your fire small so you can get in close with the skewers, or use a BBQ instead. First, place the tomatoes in an attactive serving bowl, and arrange the mozzarella, basil leaves and crackers on a platter. Now, as you pass around the platter, skewer a cube of mozzarella. Roast it *slowly*, as you would a marshmallow, over your BBQ, Hibatchi or campfire. Turn the skewer to evenly melt the cheese, but dont let it get so melty that it slides off the skewer. When the skin of the mozzeralla begins to brown (usually a minute or two, use a knife or fork to scrap the cheese off the skewer onto a cracker. Top the cheese with a basil leaf and a piece of sun-dried tomatoe and quickly place a second cracker on top. Eat at once before it cools.
